The Cod Cuisine of Tossa de Mar

For yet another year, the Cod Cooking is celebrated in Tossa de Mar, with the support of various restaurateurs from the town.

Cod has been and continues to be one of the most traditional and versatile ingredients in the Lenten dishes of Tossa's kitchen. After the time of debauchery that Carnival entails, according to the Christian liturgical calendar, a stage of reflection, penance and fasting begins to prepare for the celebration of Easter. In Catalonia, it was customary to represent Lent through an old woman with seven legs, symbolizing the seven weeks that this stage lasted and with a cod in her hand, a sign of the importance of this delicacy in our home.

The restaurants that participate in La Cocina del Bacalao de Tossa recover this culinary tradition and propose a special menu of different dishes, in which special relevance is given to cod, a fish considered suitable for fasting, which they have now managed to turn into a great party plate.
